My lunch plans got a little derailed today so I needed to whip up something quick for lunch. Usually I will throw together pasta with butter and sprinkle cheese (this is what my nieces and nephews call Parmesan cheese.
As I searched my pantry for pasta I noticed I had a can of clams. Hmmmm... could I whip together a tasty Penne with Clam Sauce? Why not give it a try.
While I boiled 1/2 lb. of penne pasta (enough for two servings) I started to prepare my clam sauce.
I melted 1 tbsp of butter into a small sauce pan and sauteed two cloves of garlic (that I minced) for about 1 minute. Then I opened my 10 oz. can of clams and reserved 1/4 cup of juice, which I added to the sautee pan along with 1 tbsp of vermouth. Then I added the clams and 2 tsp of Italian seasoning and let the liquid cook down to about 1/2.
Once the pasta was done cooking I tossed it with sauce over medium heat for about a minute to let the flavors meld. I added 1 tsp each of freshly ground black pepper and Kosher salt. Spinkled with some sprinkle cheese (Parmigiano Reggiano) and served.
It took about 10-15 minutes to whip this up.
